Whole cinnamon quills laid across warm stone beside a small pile of ground cinnamon.

Choose the right grade.

For an Australian food buyer, cinnamon isn’t simply a line on a purchasing list. Species, form and grade can change the way an ingredient works in a dish or on a shelf.

Quills are traditionally graded largely by physical dimensions. Thinner quills suit fine presentation and delicate use. Wider quills suit longer cooking and commercial applications.
